Wayne,
Thanks for an inspirational meeting last night.   Here is a good recipe for chicken - it takes slightly longer than 20 min to prepare, but good anyway.  Could  you figure out the points?  Here it is:

Lynn's Chicken Italian

4 boneless chicken breasts
1 cup sliced mushrooms
1 cup sliced onions
½ cup sliced red or green peppers
1 tsp. Minced garlic
1 T. oregano
1 T. basil
1 T. olive oil
1 T. sugar
1 cup red wine
1 cup water
1 14oz. can diced tomatoes
1 14 oz. can tomato sauce
salt, pepper to taste

Sauté over LOW heat, mushrooms, onions, peppers in olive oil for 5 minutes.
(if you use a lid on  your pan you can let the steam do the work instead of
adding more oil!)  Add garlic, sugar, oregano, basil, salt and pepper,
stirring well.  Add chicken and sauté for additional 5 minutes, until
chicken turns opaque.  Add tomatoes, wine, water and tomato sauce.  Bring to
boil and simmer over medium heat 30 minutes or until sauce thickens.  Serve
over rice if desired.   Serves 4 generous portions.
