I love your site along with recipes. Here is one of my families favorites.
Skillet Chicken Divan
Recipe time: 17 minutes
1 Family-size bag quick cooking boil-in-bag rice
Cooking Spray
1 (9-ounce) package frozen diced cooked chicken breast
1/2 (16-ounce) package fresh broccoli flowerets
2 tablespoons water
1 can reduced fat, reduced sodium cream of chicken and broccoli soup, undiluted (such as Campbell's Healthy request)
1 cup fat-free milk
1/2 cup (2 ounces) shredded reduced-fat sharp Cheddar cheese
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon pepper
1. Cook rice according to package directions, omitting salt and fat.
2. While rice cooks, coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken and broccoli; cook 6 minutes or until chicken is thawed and broccoli is crisp-tender, adding 2 tablespoons water, if necessary, to prevent sticking.
3. Combine soup and remaining 5 ingredients, stirring well. Add to broccoli mixture. Cook, uncovered, over medium-low heat 10 minutes, stirring occasionally. Serve chicken mixture over rice.
