Banana Bread - From Mary Wolf
Process in a blender/food processor 3 small very ripe bananas until pure.
Combine, in a bowl:
2 cups cake flour
1 tsp. baking powder
1/4 tsp. baking soda
3/4 cup granulated sugar
1 tsp. salt
In a separate bowl, combine:
1 beaten egg
banana pure' (approx. 1-1/2 cups)
1 tsp. vanilla
1/2 cup raisins
1/2 cup buttermilk
Gradually stir flour mixture into buttermilk mixture until well blended.
Spread evenly into a 8-1/2 x 4 x 3 inch loaf pan, coated with cooking oil spray.
Bake at 350 for 45 minutes, or until done in center.
