Black Bean and Rice Bake


Preheat oven to 350

Combine in a large bowl:

1-1/2 cups cooked Basmati Rice
1 cup cooked Black Beans (if canned, drained)
1/4 cup shredded non-fat Monterey Jack Cheese
1/2 cup Egg Substitute
1/4 cup chopped Red Bell Pepper
1/4 cup chopped Onion
2 tbls fresh Parsley or Cilantro
1 clove minced Garlic

Spray 8x8x2 baking pan.  Add mixture.  Bake 20 minutes until golden brown.  Top with fresh salsa.

Serves 26 points each
