Hi Wayne,

Here is a recipe my family has enjoyed.  I think the only point will be for the amount of salmon consumed.

This is based on the Cuban Salmon recipe published in the Wash.Post several years ago.

6 medium cloves garlic, peeled and smashed
3TBSP minced onion
1 tsp cumin
1 tsp oregano
1/2 tsp tyme
2 scant TBSP minced fresh cilantro
3 tsp minced fresh parsley
6 TBSP lime juice
salt and pepper to taste
(the original recipe calls for 2Tbsp olive oil & 2 TBSP veg. oil--I omit these)

4 salmon fillets, 4-6 ounces each

In a  nonreactive bowl, whisk together the garlic, onion, cumin, oregano, thyme, cilantro, parsley and lime juice.
Add salt and pepper.
(Stir in oils) optional in mine
Place the fillets in a shallow dish and pour marinade on top.
Marinate for 2-4 hrs. In refrig.  (I usually don't have time o marinate longed then 30 min. and it has been fine.)

Grill or broil fillets until done, basting for the the first couple of minutes with extra marinade.
(Fillets about 1/2 inch thick will cook in 5-6 min over medium coals.)

This looks great when cooked.  ENJOY.
