Cuban Black Bean Soup

Combine the following ingredients in a large soup pot.

3 cans black beans, undrained
2 cans beef broth
1 cup chopped onions
2 cups water
1 cup chopped green pepper

Bring mixture to a boil.  Cover, reduce heat, and simmer for 20 minutes, stirring frequently.

Add the following to the mixture

1 can chopped tomatoes w/ garlic and onion
1 can mild chopped green chilies, undrained
1/4 cup chopped lean ham
1/3 cup red wine vinegar
1 tsp. dried oregano
1 tsp. dried thyme
1 tsp. dried ground cumin
fresh coarsely ground pepper to taste

Cook uncovered over low heat for 30 minutes stirring occasionally.

Serves 103 points per 1-1/2 cup serving
