Creamy Chicken Fettuccine


1 skinless and boneless Chicken Breast
2 tsp. Olive Oil

Sear chicken breast in oil approximately 2-3 minutes each side.  Cut into cubes and set aside.

Add to pan:

1/2  cup Mushrooms
2 cloves minced Garlic

Sauté 1 minute on medium low heat

Add to pan:

1 tsp. All Purpose Flour
1/2 cup Chicken Broth
1/4 cup Evaporated Milk

Simmer 2-3 minutes on medium low heat
Add to pan:

1/4 cup grated Parmesan Cheese
2 tbls Whipped (or Low Fat) Cream Cheese
1/2 tsp. White Pepper

Simmer 2-3 minutes on medium heat until sauce thickens

Arrange two bowls with 1 cup of cooked fettuccine  in each.  Top each cup with 1/2 of the diced chicken.  Pour 1/2 of sauce over each and serve hot.
